For this class, we will journey through the creation of two distinctive and mouth-watering dishes that beautifully blend tradition with a touch of modernity.
We’ll start with a chilled “Crème d’Asperges Fraîches avec Gambas,” a cool and refreshing cream of asparagus soup, served with plump and perfectly cooked Gambas (King Prawns) and a side of Saffron Rice. You’ll learn how to prepare a creamy, vibrant green asparagus base, and how to expertly cook the gambas to achieve a sweet and tender result. Paired with a sprig of fresh herbs and a hint of spice, this combination appetizer/entree is a symphony of flavors that sings of summer in France.
Next, we’ll dive into the sweet world of classic French pâtisserie. You’ll learn the secrets of crafting “Choux Praliné,” or Praline Puffs. This enchanting dessert involves delicate choux pastry puffs, filled with a silky, nutty praline cream. The praline filling, a delightful mixture of caramelized hazelnuts and almonds, adds a crunchy contrast to the soft and light choux pastry. Finally, a dusting of powdered sugar offers the perfect sweet finish.
